Ice Cream Maker


An ice cream maker is a machine that produces ice cream. It usually consists of a rotating paddle and a bowl with a layer of space outside it to hold rock salt. Other types of ice cream makers include a bowl that you can freeze. This type does not require rock salt. The ingredients for ice cream usually include:
  • Cream
  • Milk or milk fat
  • Sugar

    Ice Cream


    Ice cream (originally ''iced cream'') is a frozen dessert made from dairy products such as cream (or equivalents), combined with flavourings and sweeteners. This mixture is super-cooled by stirring while reducing its temperature to prevent large ice crystals from forming. Traditionally, the temperature has been reduced by placing the ice cream mixture into a container that is immersed in a mixture of crushed ice and salt. The salt causes a change of state from frozen to liquid water, removing a large amount of heat from the ice cream in the process. Although the term "ice cream" is sometimes used to mean frozen desserts and snacks in general, it is usually reserved for frozen desserts and snacks made with a high percentage of milk fat. Many countries, including the United States, regulate the use of some of these terms based on quantities of ingredients. Modern commercial ice cream is made from a mixture of ingredients:
  • 10-16% milk fat
  • 9-12% milk solids-not-fat: this component, also known as the serum solids, contains the proteins (caseins and whey proteins) and carbohydrates (lactose) found in milk
  • 12-16% sweeteners: usually a combination of sucrose and/or glucose-based corn syrup sweeteners
  • 0.2-0.5% stabilizers and emulsifiers e.g., agar or carrageenan extracted from seaweed
  • 55%-64% water which comes from milk solids or other ingredients These ingredients make up the solid part of the ice cream, but only 50% of the final volume, the remainder being air incorporated during the whipping process. Generally, the cheaper the ice-cream, the cheaper the ingredients, and the more air is incorporated (since ice cream is sold by volume, it's economically advantageous for producers to reduce the density of the product). Artisan-produced ice creams, such as Berthillon's, often contain none to very little air. Ice-creams come in a wide variety of flavours, often with additives such as chocolate flakes or chips, nuts, fruit, and small candies/sweets.

    The revelation of the ice-cream cone at the St. Louis World fair in 1904 is incorrect. It was available in the 1880s in Britain, but I have to research it before changing the details. Mintguy

I'm not sure how true the statement about icecream in Britain is.     Neapolitan Ice Cream


    Neapolitan is a kind of ice cream, or more precisely, of ice cream packaging: a third of the box (or tub, bar, etc.) is strawberry, a third is chocolate, and a third is vanilla. There can be other combinations (eg. banana/vanilla/chocolate or caramel/vanilla/chocolate), but these are the most common. On different lists, it is listed as the third or fifth favorite ice cream flavor in the United States. Neil Armstrong ate some in space in July 1969. Neapolitan ice cream is so called because it is a variant on spumoni, a three-flavoured (usually cherry, chocolate, and pistachio) ice cream originally made in Naples.
